Cook once, eat twice... or even three times!

How often do you feel like you are just throwing together the same old meals week in week out because you 'don't have time' to cook something new, different or healthier?

It's almost like you are on auto pilot and you cook whatever is easiest after a long day at work and often restless children with cries of 'I'm hungry when is tea ready?'

Well, there are some clever tricks that you should learn that can help you eat a more nutritious diet and have time to do the things you really want to !

I know, you think there is a catch or it's going to cost you a fortune on a private chef ! Don't worry it's not going to cost you any more than the ingredients and maybe a little extra time once a week or once a month if you want to be super organised !!

Trick number one - Save time in the evenings !Batch Cooking.

  • Pick a day that you have time to spend a few hours in the kitchen - for me its a Sunday. I love putting the radio on and pottering around cooking up lots of lovely food.
  • Next think of the meals you'd like to eat that week, then go get all the ingredients.
  • Then all you have to do is cook each dish, portion them up into containers, label them and pop them in the freezer... all you have to do is remember to get them out the day you want to eat and add some quick veggie sides for everyone to enjoy.
  • Using the batch cooking method means you don't have to think beyond getting something from the freezer, call it a home made ready meal! It takes away having to think of something on the spot and will stop you from reaching for the not so good snacks as well.

Another great way to minimise your time but maximise your nutrition is saving a portion of food for lunch the following day

Trick number two - Cook once Eat Twice

When you are preparing the evening meal, save a little to one side for lunch the following day. That way you know exactly what you are going to eat and you will avoid picking up food that is loaded with sugar and nutritionally lacking and may leave you feeling sluggish and bloated.

Trick number three - Overnight Oats

Fancy waking up to a wholesome, filling breakfast that takes no effort at all? Simple, make up a batch of overnight oats the night before and leave in the fridge... you'll find some great recipes here.

Trick number four - Salad Jars

Love fast food, but not sure how to make it healthy? Make up a weeks worth of salad jars for the fridge then just grab one and go... these are so simple and you can add in all your fave salad ingredients. Hop over here for some inspiration!
